Roasted Fennel

If you grew up in an Italian or Italian-American household, you’re no stranger to fennel. It makes the perfect snack or salad but prepare to meet your new favorite side dish…roasted fennel. It’s simple, it’s delicious and it takes fennels flavor profile to a whole new level.

Ingredients

2 bulbs of fennel

2 tablespoons oil

salt and pepper to taste

Directions

Wash your fennel thoroughly

Chop off the long pieces of the fennel at the top and discard. Make a slit down both sides of the fennel and remove the outer pieces and discard. Cut off a thin layer of the bottom of the fennel and discard

Cut your fennel in half and then slice each half into three pieces

Place it on a baking sheet and season with oil, salt and pepper

Bake at 400F for 40-45 minutes or until it is tender and begins to caramelize a bit
