Roasted Chicken with Lemon and Tomatoes

The days are getting chillier which means we can turn our ovens on again for some delicious roasted chicken. Slices of lemon and garden tomatoes bring a beautifully bright flavor to this dish. I placed it over top of some creamy polenta, which is optional but I highly recommend!

Ingredients

6-8 chicken drumsticks

2 lemons

3-4 medium sized tomatoes, chopped

2 teaspoons of oregano

1/4 cup olive oil

salt and pepper to taste

Directions

Place your chicken drumsticks in a large bowl, add juice from 1 lemon, oregano, salt, pepper and olive oil. Mix well so all of the chicken gets coated.

Take your other lemon and slice it thinly and chop your tomatoes into bite-sized pieces. Add it all to the bowl of chicken and mix again.

Pour the chicken mixture into a baking pan and bake at 425 for 40-45 minutes.

Cook your polenta according to package instructions.

Plate and serve immediately.
