Lamb Chops with Mint Gremolata

If I could eat this dish for dinner once a week I would. It’s quick and easy to make for a weeknight meal but also would impress any guest! The charred lamb chops cooked in a cast iron skillet topped with the bright, minty gremolata is a match made in food heaven!

Ingredients

8 lamb chops

salt to taste

2 cloves of garlic smashed

1 tablespoon olive oil

Gremolata:

1 bunch of mint

1 garlic clove

1 teaspoon Calabrian chili pepper

salt

zest of 1 lemon

3 tablespoons extra virgin olive oil

Directions

In a food processor add the mint, garlic, Calabrian chili pepper, salt, lemon zest and oil. Pulse a couple of times until minced

In a heated cast iron, add oil and garlic and let it cook for 1-2 minutes

Next, add your lamb chops and cook on each side for 4-5 minutes on medium heat. This will get you a medium rare lamb chop so cook longer if you like it well done!

Remove from the skillet and plate

Add the gremolata on top and enjoy!
