Flounder with Lemon, Capers, Garlic and White Wine

Ingredients

4 flounder fillets

4 cloves of garlic, grated

1 tbsp capers

1/3 cup white wine

1/4 cup parsley, chopped

juice of 1 lemon

extra virgin olive oil

salt and red pepper to taste

Directions

Preheat the oven to 400 F

Put your flounder filets in a tray and grate the garlic over top. I use a microplane and then take the grated garlic and massage it onto each piece of flounder

Next, I salt each piece of flounder and then sprinkle the capers over the top

Pour the lemon juice over the top of the flounder and then drizzle with extra virgin olive oil. I like to cut the lemon I juiced into wedges and throw it in the tray

Next add your red pepper flakes and chopped pasley

Pour the white wine over top and bake for 20 minutes or until the internal temperature is 145F

When itโ€™s done, I like to grate some lemon zest over top and pour the excess juice from the tray over it

Serve immediately and buon appetito!
